A canvas is basically the size definition for certain group of product sizes. For example a phone cover is not the same dimensions as a 50 x 70 poster or an A3 sized poster for that matter. This is why we need canvas'es, otherwise some elements of your designs would not be visible on some products, while there would be white space in the edges on other products.
Theres a limit to the size of a canvas of 2000 pixels times 2000 pixels. This limitation is put in place because we export canvas'es in 3x to improve the DPI for printing. So the final export max will be 6000 x 6000 pixels.
We recommend to always go for the highest possible amount of pixels.
